Calling all monkey bread lovers! Monkey Muffins made with “JIFFY” Baking Mix are a sweet, cinnamony spin on a classic.
Yields: 14 - 16 Muffins
Preheat oven to 425°F. Grease muffin pans or use paper baking cups.
Combine cinnamon and sugars and set aside. Combine margarine or butter and vanilla; set aside to thicken up slightly. Combine baking mix and milk. Blend to a soft dough.
On floured surface, knead 8 – 10 times. Pull off small pieces and roll into balls the size of a walnut. Dip in margarine or butter. Roll in sugar mixture.
Place 4 – 5 pieces in each muffin cup. Sprinkle pecans or walnuts on top. Bake 14 – 16 minutes.
Re-melt leftover butter and brush on top of each muffin. Cool 2 minutes before removing from pan.
