Show your loved ones how much you care by baking them our sweet, festive Pink Velvet Cupcakes, made with “JIFFY” Golden Yellow Cake Mix.
Yields: 11 - 12 Cupcakes
Preheat oven to 350°F. Grease muffin pan or use paper baking cups.
For batter, prepare cake mix as directed on package, substituting the buttermilk for the water. Add food coloring until desired shade is achieved, mixing between each addition.
Fill muffin cups 1/2 full. Bake 15 - 20 minutes or until toothpick inserted in center comes out clean. Set aside to cool.
For frosting, beat cream cheese and butter until smooth. Add powdered sugar. Beat on low until incorporated. Add marshmallow crème and vanilla. Beat on high until light and fluffy.
Pipe or spread frosting onto cupcakes. Optional: reserve one cupcake for use as decoration by crumbling and sprinkling on top of frosting.
