Preheat air fryer to 310°F. Grease a 9” x 5” loaf pan.
Cream sugar and shortening. Add remaining ingredients. Mix until blended.
Pour into pan and cover with aluminum foil. Cook 25 minutes. Carefully turn pan and cook an additional 20 minutes.
Remove foil and turn pan. Cook an additional 10 - 15 minutes until golden brown or when toothpick inserted into center comes out clean.
