Just 3 ingredients for thin, delicious Crepes.
Yields: Twelve 7" Crepes
Preheat pan or skillet over medium-high heat. Skillet is ready when a few drops of water sizzle and disappear from surface. Grease pan.
Combine all ingredients in bowl. With wire whisk or fork, blend until all lumps are gone.
Pour 1/4 cup batter onto pan; immediately tilt and turn the pan so the batter spreads evenly in a thin circle. Cook until bottom is lightly browned, about 1 minute. Flip and cook an additional 30 – 45 seconds.
Remove from pan. Spoon desired filling down center of crepe, then roll up.
To freeze crepes, stack waxed or parchment paper between crepes, wrap in plastic wrap, then store in freezer bag.
