Berry Muffins made with “JIFFY” Baking Mix.
Yields: 12 Muffins
Preheat oven to 300°F. Grease a muffin pan or use paper baking cups.
For streusel topping, combine flour and sugar. Add butter and stir until crumbly. Set aside.
For muffins, combine baking mix, sugar, salt, baking powder, and lemon zest.
Add milk, egg, vanilla extract, and butter. Mix well. Batter will be slightly lumpy. Fold in berries.
Fill muffin cups 2/3 full. Top muffins with streusel topping. Bake 14 - 18 minutes.
