Yields: 16 - 18 Crab Cakes
Preheat oil in frying pan over medium high heat.
Combine muffin mix, bread crumbs, cheddar cheese, cream cheese, egg, milk, scallions, seasoning, salt and pepper. Stir in crab meat until combined.
Form into 2” balls, then flatten into a disk. Place in frying pan, a few at a time, and sauté until golden brown, turning once during cooking.
