Frosted Orange Fruit Cake made with “JIFFY” Baking Mix.
Yields: 15 - 18 Servings
Preheat oven to 350°F. Grease a 13” x 9” baking pan.
For cake, combine baking mix, oats and sugar.
In separate bowl, whisk eggs, orange juice and oil; stir into dry ingredients just until moistened.
Fold in carrots, apples, raisins, cranberries and walnuts. Pour into pan.
Bake 40 – 45 minutes or until toothpick inserted in center comes out clean. Cool on wire rack.
For frosting, cream margarine or butter and powdered sugar. Add vanilla extract and orange juice; whipping until smooth.
If frosting is too thick, add more orange juice a little at a time until desired consistency.
