Jelly Roll in a “JIFFY” made with “JIFFY” Raspberry Muffin Mix.
Yields: 8 – 12 Servings
Preheat oven to 400°F. Grease a baking sheet and line with parchment paper. Lay out a clean kitchen towel, dust with 1/2 cup powdered sugar; set aside.
Combine remaining ingredients for cake; mix well.
Spread onto baking sheet. Bake 10 - 12 minutes.
Immediately flip cake onto towel. Carefully peel off parchment paper. Roll up cake and towel together; cool completely.
While cake is cooling, combine filling ingredients and beat until creamy.
After cake has cooled, unroll. Spread filling mixture onto cake. Carefully roll cake back up without towel. Cover with plastic wrap and refrigerate.
To serve, sprinkle with additional powdered sugar, cut into 1” slices
