Yields: 35 small to medium size Cookies
Preheat oven to 350°F. Lightly grease a baking sheet or line with parchment paper.
Cream butter and sugar on medium speed. Add egg and vanilla extract. Beat to combine. Scrape bowl. Add remaining ingredients and mix to combine.
Wrap in plastic wrap and refrigerate for at least 1 hour.
On floured surface, roll out to 1/8” thickness. Cut into desired shapes, re-rolling dough scraps.
Bake 8 – 11 minutes. Cool and decorate (optional).
