Orange Poppy Seed Muffins made with “JIFFY” Baking Mix.
Yields: 12 - 15 Muffins
Preheat oven to 400°F. Grease muffin pans or use paper baking cups.
Combine baking mix, sugar, poppy seeds, pudding mix, orange peel and baking powder; set aside.
In separate bowl, combine egg, buttermilk, orange juice and oil. Using whisk, blend well. Fold into dry ingredients just until moistened.
Fill muffin cups 2/3 full. Bake 18 – 20 minutes.
