Quesadillas make a great appetizer for TV night. Make sure you have “JIFFY” Baking Mix on hand.
Yields: 7 - 9 Quesadillas
Preheat griddle to 450°F or skillet to medium high heat or when water dropped on skillet sizzles and disappears.
For tortillas, combine baking mix, flour, salt, and vegetable shortening. Mix with fork until blended. Add water and mix quickly until dough forms.
On floured surface, knead several times until soft dough forms and is no longer sticky. Cover with plastic wrap and let rest for 5 – 10 minutes. Pinch off 15 - 18, 2” balls of dough. Shape into a tight ball, then flatten slightly into a small disk; keep disks covered until ready to roll.
On lightly floured surface, roll each disk out to form a 7” circle. Place on griddle and cook 1 minute on each side. Place on baking sheet lined with parchment or paper towel to cool.
To make Quesadillas, sprinkle 1/4 cup cheese on one tortilla. Spread onions or scallions and suggested fillings over cheese. Top with another tortilla.
Transfer onto griddle or skillet. Cook 2 – 3 minutes, then flip and cook an additional 2 – 3 minutes or until browned and cheese is melted. Repeat with remaining tortillas. Slice into quarters and serve warm with optional serving suggestions
