Spoon Bread Poppers made with “JIFFY” Corn Muffin Mix are a tasty bite of everyone’s favorite casserole, stuffed in a spicy jalapeño.
They’re perfect for serving as a hot appetizer or tasty snack at friend-filled dinner parties.
Yields: 15 – 20 Poppers
Preheat oven to 400°F. Lightly grease a baking sheet or line with parchment paper.
Holding jalapeño pepper horizontally, slice off the top one-third. Mince cut off pieces and set aside (optional). Scrape out insides and remove seeds. Set peppers aside.
Combine butter and corn. Blend in sour cream and egg. Add muffin mix. Blend well.
Fill peppers just up to the edge. Top with cheese and minced peppers (optional). Bake 15 – 17 minutes.
